Cashew Butter Chocolate Chip Cookies

I try and avoid refined sugar when I can but sadly still have a sweet tooth and same with my family. And I really love cookies.

After trying out a few different recipes I kind of made up this one and it’s perfect. Because of the cashew butter and chia seeds it’s packed with fiber and protein as well as delicious.
I usually make a big batch of these on Sunday and we eat them all week.

Makes 14 cookies.

Ingredients 
1/2 cup organic raw cashew butter. You can also use almond but I found the cashew was sweeter and smoother. 
1/2 cup organic grade A maple syrup 
3 tablespoons melted organic unrefined coconut oil
1 tsp organic vanilla extract 
1 cup organic whole wheat flour 
1/2 tsp baking soda 
1/2 tsp fine ground Himalayan salt
1/8 cup black chia seeds 
1/2 cup organic dark chocolate chips to 3/4 cup depending how sweet you like it. I also love using these coconut sugar sweetened chips too.

Directions 
Preheat oven to 350 degrees
In a large bowl, mix cashew butter, maple syrup, oil, and extract until well blended. 
In a separate bowl mix the flour, baking soda, salt, and chia seeds. 
Add the dry ingredients to the wet and mix. 
Then add the chips and stir to combine. 
Use an ice cream scooper to put the dough on parchment paper on a cookie sheet. Press to flatten a little. 
Bake for 10 - 15 mins. They may need more depending on your oven. I check that they are a bit firm on top and then take them out and leave on the cookie sheets for a little to continue hardening.
